We at Naturally Granola love experimenting, tasting new things and creating awesome flavour combinations in our granola. Thats why we were so excited to hear that Barry Callebaut discovered Ruby Chocolate, the first new discovery in chocolate in about 80 years!!! He has been working with this bean since 2004 figuring out how best to use this ruby cocoa bean, and then launched it officially in Shanghai at the end of 2017.
When the Ruby Chocolate finally arrived in the Netherlands we couldn't wait to taste it! And we love it! Ruby Chocolate is creamy and fruity with a sour twist. To balance it out we experimented quite a bit, until we added thyme. Thyme helped to create depth and add a touch of bitterness. We then added several popped seeds and grains which was the final touch!
So do you love taking your tastebuds on a little adventure? Then this Thyme for Ruby granola is definitely for you! Bare in mind though, we will only be making 50 jars of this granola. So get it while its hot!
