Healthy latte pudding with white chocolate and granola!

Sabine here, from Saudalicious! As you might have seen I am a Naturally Granola ambassador. Which in this case means that I will be making recipes with Naturally Granola and sharing these here with you. As you can probably guess based on the name of the recipe today I will be using the Giraffe Guatemala Coffee granola.




Like most Portuguese people, I am crazy about coffee. In Portugal we actually have a strong cup of espresso (bica) after pretty much every meal. This inspired me to make a little treat for you with both coffee and Naturally Granola! I decided to pair these ingredients with honey and white chocolate chips, because as we all know, chocolate and coffee are a match made in heaven!


So if you cant decide between coffee or dessert, this is the perfect combination!


For one healthy cashew latte pudding you need:
  • 1 espresso

  • 180 ml cashewmilk

  • 1 teasp. honey

  • 50 g “Giraffe Coffee” granola from Naturally Granola 

  • 1 tbsp. agar agar

  • 12 White chocolate chips



Kitchen equipment needed: 
  • milk frother

  • coffeemachine

  • (mini)whisk



In your milkfrother, put about 100 ml of the cashew milk. While your milk is frothing, make your espresso, and add the remaining 80 ml of cashew milk, the honey and the agar agar in a small pan. Heat this up slowly and bring to a simmer, make sure to keep mixing with your whisk for about 2 minutes. Take the mixture off the heat then add the white chocolate chips, whisk, whisk, whisk! 

Grab your nicest glas, pour in the frothed milk, and add the coffee mixture!

Now put your "cashew latte" in the fridge for about 60 minutes so that it can stiffen up a bit.

Sprinkle with some Giraffe Coffee Granola and a drizzle of honey.
