Back again! It's Sabine, from Saudalicious. With the summer that we have been having I keep feeling the need to make colorful and summery recipes. So this one is definitely summerproof!
This is a summery dessert, that is so healthy, you could eat it for breakfast! It is delicious either chilled or served at room temperature, so which ever you prefer. Cottage cheese is the perfect alternative for yoghurt for recipes like these. Cottage cheese is a bit more savoury which compliments the sweetness of the berry compote.
And not to forget the super crunchy Naturally Granola Ruby chocolate, adds the cherry on top (granola on top in this case).
Ingredients for two portions:
225 gr (frozen) strawberries
80 gr (frozen) blueberries
10 gr chia seed
10 gr açaípowder
200 gr cottage cheese
Naturally Granola, Thyme for Ruby (any other variation would work as well!)
Put your fruit and chia seed in a small saucepan with a small layer of water. Heat this up, until the fruit becomes soft. Stir regularly and then mash the fruit with a fork so that it becomes the same consistency as jam.
Mix the cottage cheese and banana with the açai powder in a food processor.
Layer your glass with alternating layers of the cottage cheese mixture, and the compote mixture in two glasses.
You can either serve these directly, in which case you top off the glass with your favourite variation of Naturally Granola. Or you can chill in fridge until it is ready to serve. Top off with granola right before serving.
