Quick blackberry-port cheesecake

Hi there! Sabine here from Saudalicious. I am back again with another tasty recipe, inspired by two things I very much enjoy, Naturally Granola, and Port!

 

I actually rarely drink alcohol anymore, but I do like to make the occasional exception for a nice glass of Port with good company. The flavour of port is delicious and full yet sweet at the same time, and depending on the type, pairs very nicely with fruit, chocolate or a nice cheese platter. It is also used a lot to cook with, in for example sauces. Try making mushrooms, panfried in port! Delicious I promise! 

 

With this quick cheesecake you have your drink and dessert in one! Also the perfect excuse to enjoy Port twice as much, because you can have a glass on the side. The Belgian Dark Chocolate granola from Naturally Granola is the perfect bottom to this cheesecake, because chocolate and Port are such a great flavour combination. 

 

 

For two of these port and blackberry cheesecake glasses you need:

  • 60 g Belgian dark chocolate granola from Naturally Granola

  • 150 g Soy yoghurt 

  • 2 tbsp. Ruby Port

  • 1 tbsp. date syrup

  • 3 g agar agar

  • 100 g fresh blackberries

  • 1 teasp. cacao

  • 2 teasp  chiaseed

 

Method:

With a fork, mash the blackberries with some chia seeds and cocoa (you could add some honey here if you like) put this in the fridge so that it stiffens up a bit. 

Mix the yoghurt with the date syrup and Port in a small bowl. Then heat up the agar agar with a about +- 70ml of water in a pan until it has completely dissolved (Do not bring to a boil!) 

Add the agar mixture to your yoghurt and mix this with a spatula. Put the mixture in the fridge for it to set. 

After about 10 minutes the mixture should be relatively set. Mix it again to get rid of any lumps. Divide the granola between some nice glasses. Then add the yoghurt and port mixture on top. Put the glasses into the fridge until you are ready to serve.

Don't forget to add the blackberry mixture right before you serve!
